Hi, May I know how can I use the eWeLink webhook to post the On and Off activity records of my eWeLink Smart Device to the Google Sheet?

Not try this, but I think you need to check the Google sheet features first to see how the sheets accept data via webhook.
I know some users achieve this via IFTTT of eWe Link applets.
